**Instructions**:

1. Begin by heating a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped bacon and cook until it becomes crisp and the fat is rendered. Remove the bacon with a slotted spoon and set it aside.

2. In the same pot, add the peeled pearl onions and mushrooms. Sauté them until they are golden brown and tender. Remove them and set aside.

3. Season the chicken pieces with salt and black pepper. In the same pot, brown the chicken on all sides until it develops a nice golden color. This should take about 5-7 minutes. Remove the chicken and set it aside.

4. Add the minced garlic to the pot and cook for about a minute until fragrant. Then, sprinkle the flour over the garlic and stir to create a roux.

5. Pour in the red wine and chicken broth, stirring well to combine. Return the chicken, bacon, mushrooms, and pearl onions to the pot. Add the thyme and bay leaves.

6. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the chicken is tender and cooked through. Skim any fat from the surface as needed.

7. In a separate pan, melt the butter over medium heat and sauté the mushrooms until they are lightly browned. Add these mushrooms to the Coq au Vin.

8. Once the chicken is tender and the sauce has thickened, season with salt and black pepper to taste. Discard the bay leaves and thyme sprigs.

9. Serve the Coq au Vin hot, garnished with chopped fresh parsley. Traditionally, it's served with crusty bread, mashed potatoes, or buttered noodles to soak up the flavorful sauce.
